What is Soda Water (and why bartenders use it)
Soda water is water that’s been carbonated and lightly mineralised. In this case with sodium bicarbonate, which sharpens the bubbles and gives drinks a cleaner finish.
Bartenders use soda water because it adds lift and length without adding sweetness. It brightens spirits, stretches cocktails and keeps drinks carbonated, without overpowering. Using high quality soda water delivers a balanced, clean, crisp flavour profile unmatched by lower quality counterparts.

Soda water vs sparkling water – what’s the difference?
Sparkling water is simply carbonated water.
Soda water usually contains added mineral salts such as sodium bicarbonate, which subtly changes the structure of the bubbles and makes it better suited for cocktails.
Sparkling water is designed for drinking on its own.
Soda water is built for mixing. Gin sodas, vodka sodas, whisky highballs and other spirit-forward drinks that benefit from crisp carbonation without added sweetness.

Why 180ml bottles work better for mixing
The 180ml bottles are ideal for 1-2 serve pours, depending on ice, pour size and how bad a day you're having.
Fresh carbonation every time you open one. No sad half-flat mixer lingering in the fridge.
Where it’s made (and what’s in it)

The formulation is deliberately simple:
• Carbonated water
• Sodium bicarbonate

Because sometimes the best mixer is the one that quietly does its job while the spirit takes the credit. This is why our mum told us to get into spirits. Dammit.
